Описание: I. "Sustainability is more than just reducing greenhouse emissions"Different perspectives to healthy and sustainable diets
Sustainability can be defined in many ways. This chapter describes different dimensions of sustainability, such as climate impact, chemical load, use of resources, biodiversity, and eutrophication, together with different types of diets and food systems. It also highlights the importance of social and economic sustainability as well as ethical issues, cultural sensitivity, and health as part of sustainability. The main message is that multidisciplinary, intersectoral, and systemic approaches are needed to develop more sustainable food systems that contribute to healthy dietary habits and a healthy planet.

II. "Who wasted our food?"Towards better balance
Our current food system is badly out of balance. The current agricultural system is producing enough food to feed the planet, but access to and consumption of it is very uneven. About 212 million children are undernourished, whereas 42 million children and 1.9 billion adults are overweight due to overconsumption of especially energy-rich foods. Moreover, about half of all food that is produced is never eaten but lost during harvest, transport, processing, or storage. This chapter discusses these topics including food security and different innovative ways to reduce food waste.
III. "Insects, aquaculture, and mycoproteins instead of beef tomorrow?"Choosing for healthy and sustainable meals
This chapter focuses on evaluating both health aspects and sustainability of different food categories, such as meat and dairy, fish, insects, plant-based foods, and fats and oils. Traditional diets, novel approaches, and ultra-processed foods also will be discussed. The main message is that although there are no universally accepted methods to rank individual foods, broad guidelines on healthy and sustainable diets are relatively easy to give. These guidelines to healthy and sustainable diets are briefly described.

IV. "Are ecological products really healthier and more sustainable?"Reshaping our food production
Our food systems are responsible for about one-third of global greenhouse gas emissions, more than what results from all transport, sea, land, and air, combined. We need to use our scare resources in more sustainable and efficient ways. Increasing global trade is both a threat and an opportunity. This chapter discusses potential solutions to healthy and sustainable food production, such as circular systems, better production methods, and a more holistic approach to the production of healthy foods.
V. "We need to make commitments and guidelines for healthy AND sustainable diets"Getting nutrition and sustainability into the agendas of consumers and decision makers
Although most countries have nutrition policy, sustainability is rarely incorporated into dietary guidelines or paid serious attention in food and nutrition policies. Moreover, consumer knowledge on healthy and sustainable diets is often limited. There is lack of coherence in politics, and powerful corporate, political, and other interests tend to impede the process. This chapter presents some country examples and discusses barriers and potential approaches to move sustainability and health higher up in the agenda of consumers and decision makers.

A large research literature shows that people with disabilities face substantial employment and health disparities compared to people without disabilities. People with mobility limitations often experience secondary conditions to compound their primary disability. Hollar (2013) and Hollar and Lewis (2015) showed that people with mobility limitations were significantly more likely to experience obesity and lack of access to physical exercise. Other studies have shown that access to proper physical examination facilities and equipment remain a substantial barrier in many clinics and hospitals despite the enactment of the Americans with Disabilities Act 25 years ago. Research on alternative exercise programs and new assistive device technologies offers promise to improve physical functioning and exercise for people with mobility limitations. Furthermore, increased focus on biopsychosocial over traditional medical models for disability will help policymakers and the public to recognize the complex, contextual issues (e.g., personal, social, environmental) that affect the lives of people with disabilities.Readership includes public health practitioners and educators, disability and rehabilitation researchers, clinicians and sports medicine practitioners, and disability advocates. The cancer burden of Latinos in the U.S. has doubled in 15 years, with 124,000 deaths in 2014. As the relatively young Latino population ages, their cancer burden will inevitably increase. Accurate characterization of the Latino cancer experience is critical. Latinos are heterogeneous, with varying socioeconomic circumstances, nativity and/or immigration experiences, and cultural values and practices, which all impact cancer risk factors and outcomes. While disaggregated incidence and survival profiles for subgroups─Puerto Ricans, Mexicans, Cubans, Central Americans, South Americans, Dominicans─are problematic under the existing cancer surveillance systems, cancer mortality data can be an important source of more accurate granular evidence.

Our research shows that cancer patterns by subgroup can be quite distinct, particularly among first-generation immigrants, according to country of origin. However, patterns tend to become more homogenous for second-generation Latinos and beyond, with an increased burden, for certain cancers across subgroup affiliation, such as U.S.-born Mexicans in California and Puerto Ricans born in New York. Birthplace (U.S. vs. foreign-born), used as a proxy measure of acculturation, is a strong confounder in epidemiological analyses, dramatically influencing cancer patterns. In this context, the examples of colorectal and liver cancers are intriguing. Studying these patterns, often parallel to those of other U.S. minority groups disproportionately impacted by low socioeconomic status such as Native Americans and non-Hispanic blacks, sheds light on the impact of negative acculturation. Here we summarize the findings from several studies on Latino subgroups, addressing the so-called "Hispanic Paradox" and the "Healthy Immigrant Effect"; suggest future research directions; and highlight how these analyses should frame efforts to formulate cancer prevention and control strategies in the burgeoning U.S. Latino population.

U.S. Hispanic/Latina women (Latinas) and Latin American women have a lower incidence of breast cancer than Non-Hispanic White (NHW) and African American women, but higher incidence of hormone receptor negative tumors and lower breast cancer survival than NHW women. This general statement breaks down when Latina women are stratified into subgroups based on birthplace, country of origin, and region within countries or genetic ancestry. For example, the incidence of breast cancer in Puerto Ricans and Cubans in the U.S. is higher than that of African Americans, which is not the case for Mexican-American women who have a relatively low incidence. Among Latinas in California, those of Caribbean origin have lower breast cancer survival than those from Central or South America. Studies in Colombia and Peru have shown that the prevalence of triple negative breast cancer varies between regions within those countries.
